This beet salad takes its inspiration from the Republic of Georgia, where a number of dishes utilize walnuts and herbs to produce delicious results. Try this one and tell us what you think!
 
Ingredients:
  • 2 medium sized beets, boiled or roasted and finely grated
  • 2 spoonful Greek or Turkish yoghurt (omit for vegan version)
  • 1/2 cup walnuts
  • 1/2 cup of your favorite fresh herbs - we use a mix of cilantro, dill and basil
  • Dash of paprika or red pepper
  • Dash of asafetida (optional if you have it, omit for gluten free version)
  • Salt and black pepper to taste
  • Teaspoon of lemon juice
Method:
In a blender or Magic Bullet, blend together the yoghurt, walnuts, fresh herbs, pepper, paprika, asafetida, salt and pepper and dash of lemon juice. Take this sauce and mix it in to the grated beets. Taste and add more salt/pepper if necessary. Chill in refrigerator for at least an hour before serving. If you'd like, after chilling, roll the beets into small 'patties' or balls and serve on a plate. Enjoy!
