Carrot sauce, in English it is called dip. It’s something you can spread on bread, cheese, lettuce, cracker and etc. It is convenientfor a snackand it replaces the traditionalsausageon bread.
Dip from raw carrots:
5 cups of grated(I rubbedon a coarse grater) carrots,
2 cloves of garlic,
0.5 cups of grated almonds,
0.5 cups of sesame seeds (in the original - 0.5cuptahinipaste, but Idid not dare),
0,25 cups of olive oil,
0.5 cups of orange juice,
2 tbsp of lemon juice,
2 tbsp of cumin,
2 tbsp of paprika,
2 tbsp of salt
Pepper to your taste,
2 tbsp of parsley and coriander, or any greens.
Add it all to a processor or a vegetable cutter (lower knife) and mix until it become smooth. After add salt and pepper. Put it into jars. Infuse in refrigerator for 5 days. Enjoy your snack!
