DS CLUB: Atherosclerosis and dietary baursaks

On March 29 the members of DS CLUB: Smart and Healthy Sunday once again met to discuss important issues and spend yummy and unforgettable Sunday together. Small photo report of the event is in our article.

The theme of the meeting was going to be very serious, because we were going to discuss one of the four most common diseases and causes of death - arteriosclerosis. Guests gathered and got to know each other.  Some of them heard about our project for the first time.





In order to discuss such a serious disease we invited Ms Akkumis Salhanova, the employee of the Kazakh Academy of Nutrition, Ph.D., and executive director of the Academy of Preventive Medicine.





Guests learned about what good and bad cholesterol is, in what products it contains, how to control the level of cholesterol and why atherosclerotic plaques are formed in the arteries, which can cause heart attack or stroke. Also, they learned about other dangers that atherosclerosis contains and how to diagnose it in yourself. As it turned out, you can find good cholesterol is only in the horse meat and marine fish. As for the first sign of the high cholesterol level, which can form atherosclerotic plaques, it’s a simple shortness of breath. Then, in more severe cases, it is a pain in the chest even during the rest. Therefore, timely diagnosis, proper nutrition and a healthy lifestyle can help us all to maintain our health.





The partner of our event was the Zepter International company. The company's philosophy is about healthy lifestyle, improvement of quality of life for present and future generations, solving environmental problems, which coincides with the perception and vision of life issues, and our project. These reasons made our cooperation with Zepter even more pleasant. What the manager, Vladelina Pan, introduced to us can be called revolutionary. Healthy cooking without adding water, salt or oil, through which products retain natural flavor, vitamins and nutrients - unusual for us, while for sceptics it seems unreal.



 
But it was true. We prepared baursaks at a minimum amount of oil which was surprising, because usually, when we fry baursaks in a cauldron, we have to add oil. And, as we know, this oil is quickly absorbed by the dough. Then the oil remains in our body, deposits on our hips, but the most important thing that it stays in the arteries, causing atherosclerosis.
Dietary baursaks, that is what we called them, were prepared according to the recipe from the rye flour. These baursaks were very tasty, and most importantly - much healthier than usual ones, because rye flour contains necessary for our body amino acids - lysine, fiber, manganese, zinc, 30% more iron than in the wheat flour and 1.5-2 times more magnesium and potassium.
Here is the recipe:
  • Puree (apple, or other vegetables and fruits - pears, carrots, pumpkin) - 300 grams
  • Egg - 1 pc
  • Salt (a pinch)
  • Sugar (taste)
  • Vinegar (apple) - 1 tbsp
  • Kefir (yogurt) - 1 cup
  • Butter - 50 grams
  • Rye flour - 2/5 cup
  • Wheat flour - 0.5 cups (to get gluten)
  • Vegetable oil
Apple puree mix with egg, sugar, salt.  Add extinguished with apple vinegar soda, kefir and mix. Melt the butter in the dough and roll it, then cut into squares and fry. On the photo darker bawyrsaks are made from the rye flour. Also, we prepared a number of usual bawyrsaks by the following recipe, which were very yummy too.
  1. 1 cup milk
  2. 1 cup warm water
  3. 2 tablespoons sugar
  4. Cube of the real live yeast (1cm 1cm)
  5. Dissolves all adding flour until the sour cream consistency – predough(opara)
  6. Leave for 40 minutes to rise
  7. Add 1 egg, 1 teaspoon salt, 1/4 cup butter –make sticky dough, every 40 minutes crumple it
  8. On the 3rd time the dough is ready



At the end of the meeting, we have prepared a marine fish dorado, which contains only good cholesterol, with vegetables on a wonderful Zepter ware without water and oil. Sounds unreal, but true! It was very healthy, tasty and fun!
